Chorizo, pea and goats cheese Risotto

Whats great about this tasty risotto meal is that it can be cooked as a romantic meal for 2, or for a family. there are so many different things you can do with a risotto it can make for a different and exciting meal every time you make it. and I love this version of it.

Shopping list for 2 people

Risotto rice (Arborio Rice)

Chorizo

1 medium onion finely chopped

2 celery sticks finely chopped

Vegetable stock cube and 800ml hot water

Small bottle of white wine (optional)

Butter

Parmesan Cheese

Goats Cheese

Frozen peas

Olive oil

Crusty Bread ( I go for Tiger Loaf)

How to cook

Boil the kettle and prep all your food, chop your onions and celery and slice your chorizo, then place a frying pan and 2 saucepans on the the heat , put the stock cube in one and add the boiling water.

Place the Chorizo in the dry frying and fry off then put some oil or butter into saucepan then put the onions and celery in to sweat off should take about 3 minutes.one ready add 2 cups of rice and stir quickly not letting the rice stick to the pan then quickly add your small bottle of wine, give it a stir then leave to let the rice soak up that booze.

Turn your pan off with the chorizo in and put to one side.

Once the rice has soaked up that booze, start adding a ladle of stock into the rice, stirring constantly not letting the rice stick as it socks all the stock up, when the rice has socked up the stock, add more and keep doing this until the rice has thickened up and the stock has gone.

Turn the heat off the pan and add a knob of butter and 50g of graded parmesan and the frozen peas then stir and put the lid on for 5 minutes.

Whilst the risotto is thickening up slice your goats cheese and cut your bread if having.

Now your ready to place up, give your risotto a good stir again to make sure all the butter and cheese has melted then place on the place, top with the chorizo and some of its oil and place your goats cheese on the hot rice. and top with a little more grated parmesan

Wallah, now you can woo your better half with a nice home cooked meal or your family what ever you want. Hope you enjoy this very tasty risotto meal.

    Ooo sounds really nice! I think I’d love it but not sure if the husband would. Ah sod him I’ll make some for myself.. if he doesn’t like it then I get double helpings! :D
